A classic American buttercream is simple and stable, but for a silkier texture, Swiss or Italian meringue buttercream is ideal. These meringue-based buttercreams have a lighter consistency, making them easier to smooth. Using high-quality butter and ensuring all ingredients are at room temperature helps create a more consistent texture.
Preparing the cake properly before applying buttercream is essential. Once the cake layers are baked and cooled, level them to remove any domed tops. Chilling the layers before assembling helps reduce crumbs and makes them easier to stack. Using a simple syrup soak can also keep the cake moist and provide a smooth surface for frosting.
A crumb coat is an essential step in achieving a flawless finish. This thin layer of buttercream traps any loose crumbs and creates a base for the final layer. After applying the crumb coat, chill the cake for at least 15-30 minutes to allow it to set. This ensures that the final coat goes on smoothly without picking up crumbs.
